One Bowl Banana Bread
This loaf is delightfully healthy with lots of fiber, good-ish fat and dairy free for those who care! My son wishes I would stop experimenting and just make it the same each time. But where is the fun in that? My daughter wishes it was Starbuck’s pumpkin loaf (!) Thankfully my husband eats it every time without audible comment.
Ingredients
1 1/3 cups mashed very ripe banana (about 4 medium or 3 large)
3 T. ground flaxseed
1/3 cup almond or other non dairy milk
1/3 cup coconut oil melted
1 T. maple syrup
2 t. vanilla extract
. . . . . . . . . . . . . . . . . .
¼ cup date sugar
½ cup rolled oats (try sprouted / GF if you want)
1 t. baking soda
½ t. baking powder
1-2 t. cinnamon
1 t. nutmeg (optional)
½ t. fine sea salt
1 cup Einkorn* wheat flour (or spelt works too)
Directions
Preheat oven to 350 degrees. Use a bit of parchment paper to grab some coconut oil and grease a 9×5 inch loaf pan. In a large bowl mash up the banana with a fork until almost smooth then stir in the “wet” ingredients (ground flax, milk, maple syrup, vanilla, melted coconut oil). Once mixed add in the “dry” ingredients (date sugar, oats, baking soda, baking powder, cinnamon, nutmeg if desired, salt, flour). Voila! No need to overmix. Spoon into the loaf pan making sure to spread it out evenly. Feel free to add some fun toppings like chopped walnuts or choco chips but truly yum as is.
Bake loaf on middle rack uncovered for 40-50 minutes (ovens vary!) If you have a cooling rack, great otherwise you can turn over a big colander and place on top. Cool 30 minutes or much less as it’s hard to resist trying asap! No judgement. Can be on the counter for a few days or freeze (sliced!) up to 4-6 weeks.
*What’s Einkorn?? It’s part of the “ancient grain” crew and the only wheat that has a low gluten index. You can certainly make this totally gluten free by swapping out the einkorn for almond or oat flour. I recommend using a combination of the two for a nicer texture.
A note about date sugar: I realize you may not have on hand, next time : ) Second best is coconut sugar or last option regular sugar which for either you need to add another ½ cup of flour. Confusing I know but it turns out date sugar has fiber which is great and takes up room so you need less flour when using. Feel free to reach out if you wanna yell at me but I’m just a fiber evangelist ; )
notice the walnuts are on only half : ) a way to appease those in the fam who are not team walnut.
