Choco PB Energy Bites
You have probably seen variations on this. Gut-friendly ingredients are rolled into super-filling balls of goodness. These guys take 10 minutes to make and are so easy to take on the go. They fill you up and satisfy a sweet craving – what’s not to love!
Ingredients
3/4 cup peanut butter
1/2 cup rolled oats (I like sprouted GF / regenerative if you can find it)
1/4 cup grated dark chocolate*
1/4 teaspoon salt (ONLY if PB unsalted)
1/2 cup chia, flax + hemp seeds (mix any or all see note about texture!)
1 1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract (optional)
Directions
Mix all ingredients together in a bowl.
Roll dough into balls with your palms (if too sticky put in frig for 10 minutes and then try again).
Pop in the fridge for half an hour (will keep in frig for up to 2 months)!
Notes
*I like Nativia dark chocolate “wafers” (it is def. dark so if you are team milk then look for those) – chop up about 10-12 or so, feel free to use what you like best! You can also throw in 1-2 T. of goji berries for an added superfood boost. Also regarding the “seeds” I like a mix but note not more than 2-3 tablespoons of each to make up the 1/2 cup and if you are not a texture person I recommend using just the ground flax as it will be less “crunchy” than using Chia (Hemp seeds are softer but still have texture). Happy to hear about your own creative variations! Lastly some folks add a little maple syrup but I don’t think necessary? Try 2 teaspoons of date sugar if wanting it to be sweeter as that adds some fiber along with a low-glycemic sweetness.
PS flossing may be needed post, apologies but also YAY for seedy goodness!
serving size is 2. feel free to add some fresh fruit on the side for added fiber and natural sweetness.
